Walnut, Apple, Chickpea & Kale Salad

Walnut, Apple, Chickpea & Kale Salad with Maple Mustard Dressing

(serves 4-6)

Ingredients:

4 kale leaves, roughly chopped

⅙ red cabbage, finely chopped

2 zucchinis, grated

2 apples, sliced into thin crescents

1 large celery stick, thinly sliced

1 ripe avocado, flesh finely sliced

1 handful of parsley, finely chopped

1 cup of walnuts

3 cups of cooked chickpeas

For the dressing:

¼ cup of maple syrup

¼ cup of water

1 tbsp of tahini

1 tsp of grain mustard

1 lemon, juiced

salt and pepper to taste.

Method:

Place all of the chopped salad ingredients into a large bowl and toss well.

For the dressing:

Place the dressing ingredients into a jar with a firm fitting lid and shake well to combine.

Pour the dressing over the salad. Mix well and serve.
