Sweet Chilli Lentil Burgers

(serves 4)

Ingredients:

1 cup cooked brown rice

½ cup cooked brown lentils

½  cup rice flour

½ tsp turmeric

3 tbsp nutritional yeast flakes

2 tbsp sweet chilli sauce

1 tbsp soy sauce

1 pinch salt

1 onion, sliced into thin rings

fresh wholegrain bread rolls, cut in half horizontally

2 large tomatoes, cut into slices

handful of fresh salad greens

Method:

Add the cooked brown rice, cooked brown lentils, rice flour, turmeric, nutritional yeast flakes, the sweet chilli sauce, soy sauce and a pinch of salt to a mixing bowl. Mix the ingredients well.

Take about half a cup of mixture in your hand and form five burgers and set aside. Add the onion rings to a heated frying pan and fry over medium heat, turning until golden brown. Remove and set aside.

Place the burgers into the frying pan and cook for 3-4 minutes, turning when golden brown. Remove when ready. Create your burger on a fresh roll, served with fried onion, sliced tomato and fresh salad greens.
