4 handfuls of mixed salad greens
2 cucumbers, sliced into thin rounds
1 handful of mint, roughly chopped
¼ tsp of onion powder
¼ tsp of garlic powder
2 tbsp of sunflower seeds
1 cup of kalamata olives, pitted
1 cup of raw cashews
1½ cups of cooked chickpeas
salt and pepper to taste
Place a handful of mixed salad greens on four plates. Combine the onion powder and garlic powder then sprinkle a little over each of the plates of leafy greens.
Add some sunflower seeds, kalamata olives, raw cashews and
cooked chickpeas into a bowl. Add salt and pepper to taste. Squeeze over the juice of one lemon. Mix well.
