Quinoa & Red Kidney Bean Burgers

(serves 4)

Ingredients:

1 onion, finely diced

1 garlic clove, finely diced

1 handful fresh parsley, roughly chopped

1½ cups of cooked red kidney beans

1 cup of cooked red quinoa

2 tbsp of soy sauce

1 tsp of dijon mustard

2 tbsp of maple syrup

½ cup of besan flour or whole wheat flour

salt and pepper to taste

Method:

Preheat the oven to 430°F or 220°C.

Heat a frying pan over a high heat. Add the onion and garlic and saute until golden brown. Add a quarter of a cup of water to deglaze the pan.

Place one and a half cups of cooked kidney beans into a large bowl and mash with a fork to resemble chunky refried beans. Add the cooked onion and garlic, Add one cup of cooked quinoa, the soy sauce and Dijon mustard. Add the maple syrup, the chopped parsley and half a cup of whole wheat flour. Mix well, add salt and pepper to taste, then mix to form a dough.

Shape the dough into patties. Place the patties on a sheet of baking paper on a baking tray. Place the patties in the oven and bake for 10 minutes. Turn the patties and bake for another 10 minutes. Remove from the oven and serve the patties in buns with salad or with a salad on the side.
