Quinoa & Chickpea Veggie Patties

(Serves 4)

Ingredients:

1 ½ cups chickpeas, cooked and mashed

2 cups quinoa, cooked

2 carrots, grated

1 small fresh beetroot, grated

1 celery stick, finely diced

1 handful coriander leaves and stalks, roughly chopped

1 tsp cumin powder

1 tsp coriander powder

1 tsp garam masala

Salt & pepper to taste

Sweet chilli sauce, to serve

2 lemons, cut into wedges

Method:

Place all of the ingredients, except the sweet chilli sauce and lemons into a bowl, mix well with your hands and then form into 12 patties.

Heat a non-stick frying pan, BBQ grill or hot plate and cook the patties until brown on both sides.

Serve with sweet chilli sauce and lemon wedges or use them for a burger in a bun with salad.
