Avocado, Watermelon, Cucumber

& Cannellini Bean Salad

(serves 4)

Ingredients:

2 avocados, skin and seed removed

1/6 watermelon, cut into 5cm cubes

2 lebanese cucumbers, cut into bite sized cubes

2 limes, cut into quarters

1 cup cooked cannellini beans

1 handful of fresh coriander leaves, roughy chopped

salt and pepper to taste

Method:

Add the avocado to a bowl and squeeze over the juice of 2 limes and slightly mash to a chunky consistency.

In a separate large bowl, toss the watermelon, cannellini beans and cucumber together.

Place the avocado mixture across a plate. Top the avocado with the watermelon cubes, cannellini beans and diced cucumber. Sprinkle with chopped coriander leaves and season with salt and pepper to taste.
